The menu at Ruth's Chris features a broad selection of high quality USDA Prime grade steaks. Other premium offerings are served in Ruth's Chris' signature fashion-"sizzling" and topped with seasoned butter-complemented by other traditional menu items inspired by the restaurant's New Orleans heritage. The restaurants also serve soup, salads and desserts with a large selection of wines. Lunch is only served at certain locations. Ruth's Hospitality Group operates Ruth's Chris Steakhouse and also owns Mitchell's Fish Market, an upscale seafood restaurant, which has 19 locations, one Cameron's Steakhouse and two Mitchell's Steakhouse restaurants. For the fiscal year 2011, company revenues were $369.5 million, up from $352.9 million, and net income of $19.5 million. History Ruth's Chris Steak House was founded in 1965 when Ruth Fertel mortgaged her home for $22,000 to purchase the "Chris Steak House," a 60-seat restaurant located near the New Orleans Fair Grounds racetrack. What began as a local success popular among the city's politicos, power brokers, professional athletes and celebrities grew into an international phenomenon. Forty years and more than 80 restaurants later, Ruth's Chris has both defined what great steak is and redefined the steakhouse experience. In 2008, Ruth's Chris Steak House acquired all the operating assets and intellectual property of Columbus, OH based Mitchell's Fish Market, which operates under the names Mitchell's Fish Market and Columbus Fish Market. The acquisition also includes Cameron's Steakhouse which operates under the names Cameron's Steakhouse and Mitchell's Steakhouse. The operating assets and intellectual property were purchased from Cameron Mitchell Restaurants LLC (CMR) for approximately $92.0 million which Ruth's Chris Steak House funded through its senior credit facility.
