Ruby Tuesday operates a national chain of restaurants known for their salad bar and also serves steaks, sandwiches, soups, ribs, burgers and platters. Ruby Tuesday offers curbside to-go service where customers can park their car outside of restaurants and have food delivered to them ready to go.
The company operates 613 Ruby Tuesday restaurants, of which 546 were company owned. Ruby Tuesday restaurants are concentrated primarily in the Southeast, Northeast, Mid-Atlantic and Midwestern United States.
In January, the company rolled out expanded Fresh Garden Bars with 58 items including eight new salad dressings made in-house. Four new freshly prepared salads were also introduced to the menu.
In fiscal 2016, Ruby Tuesday reported revenues of $1.1 billion, a 3% decline, and net loss of $50.7 million. The chain has been hurt by declining revenues and competition for customers.
The company closed 109 underperforming Ruby Tuesday restaurants in 2016.
The company was formed in 1972, when Sandy Beall and four of his fraternity buddies from the University of Tennessee opened the first Ruby Tuesday restaurant adjacent to the college campus in Knoxville. It was Sandy's dream to create a restaurant which offered great food at a great price in a fun, friendly atmosphere. The restaurant was named after a Rolling Stones song.
The company was acquired by Morrison Restaurants Inc. in 1982 and changed its name to Ruby Tuesday Inc. in 1996. The company began franchising restaurants in 1997.
The company sold off or closed 19 Lime Fresh Mexican Grill restaurants at the end of 2015.
