Ruby Tuesday operates a national chain of restaurants known for their salad bar and also serves sandwiches, soups, ribs, burgers and platters. Ruby Tuesday offers curbside to-go service where customers can park their car outside of restaurants and have food delivered to them ready to go.

The company operates and franchises Ruby Tuesday restaurants in 45 states, the District of Columbia, Puerto Rico, and 11 foreign countries. As of December 2, 2008, the Company owned and operated 713 Ruby Tuesday restaurants, while domestic and international franchisees (including Hawaii) operated 171 and 56 restaurants, respectively.

In fiscal 2008, Ruby Tuesday reported revenues of $1.36 billion and net income of $26.3 million.

Due to the poor economy, the company said it plans to close approximately 40 restaurants in its fiscal third quarter and an additional 30 over the next several years. The company expects to open just one new location this year and franchisees plan to open 12-15 restaurants during the second half of the year, including six to eight domestic and six to seven international.

History

The company was formed in 1972, when Sandy Beall and four of his fraternity buddies from the University of Tennessee opened the first Ruby Tuesday restaurant adjacent to the college campus in Knoxville. It was Sandy's dream to create a restaurant which offered great food at a great price in a fun, friendly atmosphere. The restaurant was named after a Rolling Stones song.

The company was acquired by Morrison Restaurants Inc. in 1982 and changed its name to Ruby Tuesday Inc. in 1996. The company began franchising restaurants in 1997.
